Jam Recipes – Pumpkin Pancakes w/Peach Jam

I am a pumpkin lover!!!  I LOVE LOVE LOVE Pumpkin Pie, Pumpkin cheesecake, and pretty much pumpkin everything!!  So when I saw this recipe for Pumpkin Pancakes, I couldn’t believe I have NEVER made them!  What was I thinking?  I am so making these for Halloween morning.

Pumpkin Pancakes w/Peach Jam

2 cups flour
1 Tbs. baking powder
1/2 tsp. salt
1 Tbs. sugar
1 Tbs. pumpkin spice
2 eggs
1 3/4 cup milk
3 Tbs. oil or melted butter plus 1 Tbs.
1/2 cup pumpkin mashed

Sift dry ingredients in one bowl.  Whisk eggs and milk in another bowl. Add 2 Tbs. oil or butter and pumpkin. Pour over dry ingredients. Stir, do not beat. Okay if batter is lumpy. Melt 1 Tbs. oil or butter on griddle. Cook and serve.

Waffles: Follow same recipe, but separate the eggs. Combine yolks with milk, 3 Tbs. of oil or butter, and pumpkin mashed. Stir into the dry ingredients. Beat egg whites until stiff and gently fold into batter. Cook and serve.

Serve with Peach Jam

You can even cut out jack-o-lantern faces after they have been cooked and serve them up!
