Jam Recipe – Apricot Chicken Pot Stickers

Apricot Chicken Pot Stickers

2 cups + 1 Tbs water, divided
2 small boneless skinless chicken breasts
2 cups chopped finely shredded cabbage
1/2 cup all fruit apricot jam
2 green onions with tops, finely chopped
2 tsp. soy sauce
1/2 tsp. grated fresh ginger
1/8 tsp. black pepper
30 wontons wrappers

Bring 2 cups water to boil in med. saucepan.  Add chicken.  Reduce heat to low; simmer, covered, 10 min. or until chicken is no longer pink in the middle.  Remove from saucepan and drain.  Add cabbage and remaining 1 Tbs. water to saucepan.  Cook over high heat 1-2 min. or until water evaporates, stirring occasionally.  Remove from heat; cool slightly.  Finely chop chicken.  Add to saucepan along with jam, green onions, soy sauce, ginger and pepper.  Mix well.  Remove 3 wonton wrappers at a time from package.  Spoon slightly rounded Tbs of chicken mixture onto center of wrapper; brush edges with water.  Bring 4 corners together; press to seal.  Repeat until wrappers and filling are gone.  Spray steamer with nonstick cooking spray.  Fill steamer basket without filling it too much so they do not stick.  Cover; steam for 5 min.  Serve onto plate with Sweet & Sour Sauce.
