What's on the menu? – An Orange Dream Salad!
There are a few things in life that you can always count on. If you have more than one child something will always go wrong right before you walk out the door, one of your children will make you laugh at least once every day, and my sweet tooth will always be willing to pass on amazingly delicious “sweet” salads! This recipe is one that I just came across at a Relief Society dinner (a dinner that is put on by my women’s group at church). It is very good and has mandarin oranges in it so it is healthy on some level… 🙂
Orange Dream Salad
60 Ritz crackers
1 square butter melted
1/4 c. sugar
Crush crackers into fine crumbs in a gallon Ziploc bag. Add butter and sugar. Reserve 3/4 c. for topping and pat remaining crumbs into a 9×13 dish.
1 12 oz. Cool Whip
1 can sweetened condensed milk
1 6 oz. can orange juice concentrate (thawed)
Mix well. Add 3-4 cans of drained mandarin oranges and stir in carefully. Pour over crumbs in dish. Sprinkle reserved crumbs on top and place in fridge. Chill for at least 3 hours. Can be made the day before.
